Orange Feta Pistachio Salad



This is one of the best thing I've eaten in a long time! I’ve been stuck in an endless cycle, making the same dishes over and over again, for quite a while now. Very little time and very little energy. At that point I saw a salad with oranges, feta, pistachios and avocado in a magazine and that inspired me to get in the kitchen.

Sure, it’s not cooking as much as assembling. However, flavor wise this will deliver. I ate this salad with some thinly sliced Serrano ham. It would stand up well without anyone else, or be an ideal side dish for the occasions.

Orange, feta & pistachio salad

Serves 1-2

·        2 oranges, peeled and thinly sliced 
·        1 avocado, diced
·        70 g feta cheese, crumbled
·        2 tbsp pistachio nuts, coarsely chopped
·        Small handful of raspberries 
·        Black pepper


Layer in a large salad plate. Finish with crushing of black pepper.  Isn't this looks so simple to make. Try this OUT!!!



No Bake - Choco Shell Marie Biscuit Cake Recipe







Don’t they just look sooo delicious? Yea..they are just mouth watering.. And would you be able to Guess what are they made of? Guess..Guess! They are made of MARIE BISCUITS! Yes, you heard me right! Even if you are disastrous at kitchen, attempt this terribly simple dish. 

Here is the recipe-
  1.  Blend white flour(maida), powdered sugar , milk and a little coffee powder in a bowl. The paste should be dilute.    





  2. Now dip the marie biscuits one by one and arrange them in a stack pattern like this-


 3. Mix sugar, cocoa powder, and melted butter in another bowl. This would be a thick mix like this-




 4. Now cover the biscuit stack with this chocolate mix consistently like this-




 5. Wrap this stack in an aluminium foil and keep it in the fridge for at least 3 hours.

 6. And you are done !Cut it into slices from the corner like this.

Christmas morning muffins recipe soft mildy sweet muffins with a crumble topping and vanilla glaze. These muffins are mildy sweet and salty. Have a Look at the recipe. 

Ingredients
1 cup whole wheat flour       
1/2 tbsp. baking powder       
1/2 tsp. cinnamon powder       
1/4 tsp. nutmeg powder       
1/4 tsp.  salt       
1/8 cup + 1 tbsp. sugar       
1 no egg       
1/2 cup yogurt       
1/3 cup milk       
1/8 cup butter       
1/2 tsp. vanilla essence       
  
   For the crumble topping:    
   
1/2 tbsp. butter       
1 tbsp. wheat flour       
1 tbsp. sugar       
1 pinch salt       
1/4 tsp. cinnamon powder       
1/4 tsp. nutmeg powder       
2 tbsp.  all fruits / cranberries       

   For the glaze:

1/3 cup powdered sugar       
1/4 tsp. vanilla essence       
1/8 tsp. nutmeg powder       
2 to 3 tsp. milk       

Instructions
  • To a mixing bowl - add wheat flour, baking powder along with cinnamon powder, nutmeg powder and salt.       
  • Mix well using a whisk. In another mixing bowl add butter and sugar.       
  • Whisk it then add an egg.       
  • Whisk well until creamy. Add curd and milk.       
  • Whisk well. Then add vanilla essence.       
  • Add flour mixture and mix it. Set aside.       


To prepare the crumble topping: Add all the ingredients listed under 'for crumble topping', mix it and set aside. Now scoop out the batter.       

Line muffin liners to a muffin tray and transfer scooped out batter to it. Add some crumble topping to each muffin, sprinkle some tutti fruity to it. Bake in preheated oven at 200 deg C for 18-20 mints or until the top turn’s golden. Let the muffins cool down completely.       

To prepare glaze: Add powdered sugar, nutmeg powder. Vanilla essence and milk.       
Mix well to a creamy glaze consistency. Once the muffins are completely cool, drizzle the glaze over the muffins. Enjoy!


Notes
You can add 1/4 cup dried cranberries to the batter.I did not have so added tutti frutti for just topping.
